In celebration of our 16th wedding anniversary, this writer reserved a room in Highland Bali Villas Resort, a sanctuary of luxury nestled in the heart of Pantabangan, Nueva Ecija. This is just a scenic 4-hour drive from the bustling metropolis of Metro Manila. Highland Bali is a Balinese-inspired resort in the Philippines, redefining opulence and exclusivity in the lap of nature’s embrace.

Days before our out-of-town trip, our good friend Dra. Gem Fulgado mentioned about the delicious Spanish Bread. And being a typical snacker, I took note of that and looked forward in tasting this particular baked goodie.


Since we arrived early morning because we had to leave at night time, we saw the resort’s legendary Spanish bread. What got my attention was the price of the Spanish Bread. At P 450.00 per box, (containing 12 pieces), is it worth it?
During our breakfast, Lhara asked the waiter to heat us two pieces for us to sample. And I can say, unlike the typical, sugar-dusted rolls found in local bakeries, Highland Balli’s version has become a cult favorite, a sweet secret whispered among foodies and repeat guests.

The Spanish bread at Highland Balli Villas is a masterclass in simplicity and perfection. Its magic lies in the filling, a rich, buttery paste with just the right amount of sweetness. It’s not cloying, but rather a delicate complement to the bread’s soft, pillowy texture. The bread itself is a study in contrasts: a slightly crisp, golden-brown exterior giving way to a light and airy crumb.


During our morning walk, we get to witness firsthand how these delectable baked goodies were made. This writer got to ask some questions with two pretty and accommodating chefs, Chef Fev Tienzo and Chef Antoinette Bandai, they showed me how they prepare the day’s order and even demonstrated how they mashed and put the secret filling of the resort’s spanish bread.


Each batch is made with care, a tradition passed down through the resort’s culinary team. The Spanish bread is so popular that guests often place orders for dozens to take home before they even check out. The aroma of freshly baked bread wafts through the resort in the morning. Paired with a steaming cup of kapeng barako or hot chocolate, it’s the perfect way to start a day of relaxation and pampering. The bread has become more than just a snack; it’s an experience, a memory, and a taste of the resort’s warm hospitality.
The three-day staycation was a much needed break for our family. We get to bond and enjoy the “Bali of the North” and its amenities. While we also enjoyed our stay in our villa, our stay will always be tied to the promise of a warm, golden-brown loaf, filled with a sweet, buttery secret that keeps them coming back for more.
